I think a dragon's ability to sleep through disturbances differs... depending on the dragon. Both of mine wake up when my room lights turn on....Scuttle more easily than Tango (I peek at them). A blanket over the cage at night seems to keep them peacefully asleep.
You might want to try silk worms. Dragons love them, they are more nutritious than meal worms, and since they don't have a hard exoskeleton they are easily digested.

Since your kids like to put their mouths and hands on everything, probably even their hands in mouths, some clorox wipes would be useful. Just wipe down any area the dragon was scurrying on.

I've tried putting them on opposite sides of the tank (a good 6ft away from each other)... it kind of worked once. After a few minutes Scuttle returned to laziness. I'll try your suggestion though. Thanks.

Yep. There's a tube UVB bulb in there now. 5.0 Reptiglo. Originally I had both b/c they are in such a huge viv... but now the tube is inside and therefore can saturate more of the tank. Although.... I believe it is only UVB, not UVA/UVB.... is that a serious problem?
