My dragon, George, is about 9 months old and since Christmas has been sleeping for a couple of days, then gets up and eats a bit, then goes back to sleep for a couple of days. Sometimes he changes where he is sleeping during those couple of days. Is this normal, should I be concerned?

Thats brumation. Reptile version of hibernation. Totally normal, just keep the little guy warm and cozy till he wakes up

I've heard to remove food during brumation because they can sleep for a month or two so their food sits in their tummy and rots which can be lethal. ☹ Ember has not really brumated, so I'm not speaking from experience.

My friends beardie is currently in brumation and will occasionally come out to nibble in some kale, I’ve never heard of removing the food and it rotting though :O I’ll have to look into that
