Doesn't seem to swallow his ood properly, he seems to load it into his beard and keep it there for a while.

He loves red lettuce

They can't "load" food in to their beards. Are you sure hes not just puffing out his beard?

I'm deadly sure, and I knew they couldn't load food - which is why I asked.
When I've felt it, it's hard - he'll then 'swallow' it when I move to the other side of the room.

You're probably making him nervous when you stand that close to him, my beardy won't eat unless she's alone and it's bright.
