it can mean a lot of things, could be scared (change in environment), could be territorial (usually only when other dragons present though), or poor husbandry, or he could be sick.
Best to rule out the latter first if bearding persists or starts sleeping all day with eyes closed. All you can do is rule out these things one at a time.

this is probably not your case but mature male dragon's beard turn black when they're mating or ready to do so. but just take him to the vet.
