In my experience, baby bearded dragons are always more skittish and jumpy. It's not anything you're doing wrong, it's just their instinct to jump and run and hide because most baby beardies get eaten in the wild (out of a clutch, one or maybe two will survive into adulthood).

You would have all het hypo offspring. Colors aren't morphs in bearded dragons, so the offspring could be any color, although you could expect some to resemble the colors of their parents, or be a combination of the two.
I would guess he's a leatherback too. It's a little hard to tell from the picture but his scales do look smaller, and his side spikes look neater and shorter, like most leatherbacks have. Keep us updated as he gets older and you can see for sure!

If a male and a female are housed together, they will eventually breed and the female will get pregnant. Once she is pregnant, she has to lay the eggs or she will become egg bound (eggs trapped in her body) and will die. Even if you did want to breed them, you couldn't keep the male and female...
